One-Pan Wonder: Speedy Skillet Lasagna

Calling all busy weeknight cooks! This Skillet Lasagna is a lifesaver. It's a one-pot meal that's incredibly easy to prepare and delivers big on comfort food flavor. Made with ground Italian sausage, a chunky tomato sauce, lasagna noodles, and melty cheeses, it's a dish the whole family will love.

  • For the Savory Base:

    • 1 pound ground Italian sausage
  • For the Chunky Tomato Sauce:

    • 2 (14.5 ounce) cans crushed tomatoes
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • ½ yellow onion, diced
    • 3 garlic cloves, minced
    • ½ teaspoon dried basil
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
  • For the Pasta Perfection:

    • ¾ pound lasagna noodles, broken into pieces
  • For the Cheesy Goodness:

    • 1 cup shredded mozzarella cheese
    • Additional mozzarella cheese for topping (optional)
  • For a Touch of Freshness (Optional):

    • Ricotta cheese
    • Fresh parsley

  1. Brown the Sausage: Heat a large skillet over medium heat. Add the ground Italian sausage and cook, breaking it up with a spoon, until browned.

  2. Sauté the Onion and Garlic: Once the sausage is cooked through, add the diced yellow onion to the pan and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 30 seconds, releasing the fragrant aroma of the garlic.

  3. Building the Sauce: Pour the crushed tomatoes and diced tomatoes (including their juices) into the skillet with the sausage and vegetables. Stir everything together to combine.

  4. Seasoning Symphony: Add the dried basil, salt, and black pepper to the simmering sauce. Seasoning is key, so taste and adjust as needed.

  5. Introducing the Noodles: Break the lasagna noodles into bite-sized pieces and add them directly to the skillet with the sauce. Gently press the noodles down into the sauce as much as possible, allowing them to absorb the flavorful liquid.

  6. A Simmering Symphony: Cover the skillet with a lid and bring the mixture to a simmer over medium heat. Simmer for 15-20 minutes, stirring occasionally, until the lasagna noodles are tender.

  7. A Cheesy Finish: Once the noodles are cooked, remove the skillet from the heat. Stir in the cup of shredded mozzarella cheese until melted and incorporated throughout the dish.

  8. Time to Serve!: Spoon the Skillet Lasagna into serving bowls. If desired, top each serving with additional shredded mozzarella cheese, dollops of ricotta cheese, and a sprinkle of fresh parsley for a pop of color and freshness.

  • You can customize this Skillet Lasagna by adding other ingredients to the sauce, such as chopped mushrooms, spinach, or bell peppers.
  • If you don't have dried basil, you can substitute 1 teaspoon of fresh chopped basil leaves.
  • Leftover Skillet Lasagna can be stored in an airtight container in the refrigerator for up to 3 days.
