One-Pan Wonder: Easy Weeknight Burrito Casserole

Calling all busy weeknight cooks! This Easy Burrito Casserole is a lifesaver. It's a quick and fuss-free dish that combines all the delicious flavors of a classic beef burrito into a comforting casserole. Layers of seasoned ground beef, refried beans, corn, green chiles, and melty cheese sandwiched between soft tortillas create a hearty and satisfying meal that the whole family will love.


  • For the Savory Base:

    • 1 ½ pounds ground beef
  • For the Taco-Spiced Filling:

    • 1 packet taco seasoning mix
    • 1 (10-ounce) can mild enchilada sauce
    • 1 (15-ounce) can refried beans
    • 1 (15-ounce) can corn, drained
    • 1 (4-ounce) can chopped green chiles (optional)
  • For the Tortilla Layers:

    • 8 large flour tortillas, cut into halves
  • For the Cheesy Goodness:

    • 2 cups shredded taco blend cheese

  1. Brown the Beef: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned throughout.

  2. Taco Time!: Once the beef is browned, sprinkle in the taco seasoning mix and stir to coat the meat evenly. Sauté the seasoned beef for an additional 2-3 minutes to allow the flavors to develop.
