One-Pan Wonder: Easy Weeknight Burrito Casserole

Calling all busy weeknight cooks! This Easy Burrito Casserole is a lifesaver. It's a quick and fuss-free dish that combines all the delicious flavors of a classic beef burrito into a comforting casserole. Layers of seasoned ground beef, refried beans, corn, green chiles, and melty cheese sandwiched between soft tortillas create a hearty and satisfying meal that the whole family will love.

Ingredients:

  • For the Savory Base:

    • 1 ½ pounds ground beef
  • For the Taco-Spiced Filling:

    • 1 packet taco seasoning mix
    • 1 (10-ounce) can mild enchilada sauce
    • 1 (15-ounce) can refried beans
    • 1 (15-ounce) can corn, drained
    • 1 (4-ounce) can chopped green chiles (optional)
  • For the Tortilla Layers:

    • 8 large flour tortillas, cut into halves
  • For the Cheesy Goodness:

    • 2 cups shredded taco blend cheese
  • For a Touch of Freshness (Optional):

    • Chopped green onions

Instructions:

  1. Brown the Beef: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned throughout.

  2. Taco Time!: Once the beef is browned, sprinkle in the taco seasoning mix and stir to coat the meat evenly. Sauté the seasoned beef for an additional 2-3 minutes to allow the flavors to develop.

  3. Building the Filling: Drain the corn and add it to the skillet along with the enchilada sauce, refried beans, and chopped green chiles (if using). Stir everything together to create a flavorful and chunky filling. Simmer the mixture for 5 minutes to allow the flavors to meld.

  4. Layering Up: Lightly grease a 9x13 inch baking dish. Arrange 4 of the halved flour tortillas in a single layer on the bottom of the dish.

  5. Flavorful Layers: Spread half of the seasoned beef mixture over the tortillas. Sprinkle half of the shredded cheese on top of the meat mixture.

  6. Repeat and Bake: Create another layer with the remaining tortilla halves, followed by the remaining taco filling and the rest of the shredded cheese.

  7. Baking to Deliciousness: Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

  8. Fresh Finish (Optional): Once baked, remove the casserole from the oven and let it cool slightly before serving. Garnish with chopped green onions for a pop of color and freshness.
