They are packed with a savory ground beef and bean filling, smothered in a combination of tangy tomato sauce, hearty chili, and rich enchilada sauce. Each bite is a perfect blend of textures, with the soft tortillas, melty cheese, and tender filling. This recipe is perfect for a casual weeknight dinner or a fun get-together with friends and family.

Ingredients:

    • 6 flour burrito tortillas (about 12 inches) - Large flour tortillas provide the base for these delicious burritos.
  • The Classic Toppings:
    • 2 cups shredded lettuce - Shredded lettuce adds a refreshing and crisp element to the burritos.
    • 3 cups shredded Mexican cheese blend - Shredded Mexican cheese blend adds a melty and creamy element to the burritos.

Instructions:

  1. Preheat and Brown: Preheat your oven to 400°F (200°C). In a large skillet over medium-high heat, brown the ground beef and chopped onion together. Cook and stir the mixture until the ground beef is evenly browned and the onion begins to soften.
  2. Drain and Season: Drain any excess grease from the browned meat and onion mixture. Season the mixture with the minced garlic, cumin, salt, and black pepper. Stir well to combine the flavors.
  3. Adding the Tex-Mex Flair: Stir in the diced green chile peppers and refried beans to the seasoned ground beef mixture. Heat everything through until well blended. Turn off the heat, but keep the mixture warm.
  4. Creating the Flavorful Sauce: In a separate saucepan, whisk together the tomato sauce, chili with no beans, and enchilada sauce. Heat the mixture over medium heat until it is warmed through. Stir occasionally to ensure even heating. Turn off the heat and keep the sauce warm.
  5. Assembling the Burritos: Divide the warmed ground beef and bean mixture into 6 equal portions.
  6. Filling and Folding: Place one burrito-sized tortilla on a plate. Spread a portion of the ground beef and bean mixture in the center of the tortilla. Top the filling with a sprinkle of shredded cheese and some shredded lettuce, if desired. You can also add other vegetables of your choice at this point.
  7. Folding Technique: Fold the left and right sides of the tortilla inwards over the filling, holding them in place with your fingers. Then, fold the top and bottom sides of the tortilla inwards over the filling, creating an envelope shape. Make sure to fold the sides tightly to prevent the filling from leaking out during baking.
  8. Preparing for Baking: Repeat steps 6 and 7 with the remaining tortillas and filling. Arrange the filled burritos seam side down in two greased 9x13 inch baking dishes.
  9. Baking to Perfection: Bake the Wet Burritos for 20-25 minutes, or until the cheese is melted and bubbly, and the filling is heated through.
