Muffins:
• 1 ½ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• ½ teaspoon salt
• 3 medium bananas, mashed (about 1 ½ cups)
• ¾ cup granulated sugar
• 1 large egg, lightly beaten
• ⅓ cup unsalted butter, melted
Crumb Topping:
• ⅓ cup light brown sugar
• 2 tablespoons all-purpose flour
• ¼ teaspoon ground cinnamon
• 1 tablespoon cold butter
Directions:
1. Preheat oven to 375°F. Grease a jumbo muffin tin (makes 6 muffins) or a regular 12-cup muffin tin.
2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate bowl, combine mashed bananas, sugar, beaten egg, and melted butter.
3. Stir the banana mixture into the dry ingredients just until moistened—don’t overmix. Divide the batter evenly among the muffin cups.
4. To make the crumb topping: mix brown sugar, flour, and cinnamon in a small bowl. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
5. Sprinkle the crumb topping over each muffin.
6. Bake for 13–15 minutes (regular muffins) or 18–20 minutes (jumbo muffins), until golden and a toothpick comes out clean. Let them cool for 5 minutes before removing from the tin.
