Cottage Cheese "French-Toast" Pancakes

Ingredients:


 4 large eggs

 1 ½ cups cottage cheese

 1 cup all-purpose flour

 2 tablespoons granulated sugar

 1 teaspoon vanilla extract

 ½ teaspoon baking powder

 ¼ teaspoon salt

 6 tablespoons butter (for cooking)


Directions:


1. Crack the eggs into a large bowl and beat them just until combined.

2. Add the cottage cheese, flour, sugar, vanilla, baking powder, and salt. Gently stir until just blended—you want a chunky, pancake-batter vibe.

3. Heat a 12-inch nonstick skillet over medium heat. Add about 2 tablespoons of butter until melted and foamy.

4. Scoop about ¼ cup of batter per pancake into the skillet (cook in batches). Fry until the bottoms are golden, then carefully flip and cook the other side until golden, too.

5. After each batch, add 2 more tablespoons of butter to the skillet before cooking the next.

6. Serve your golden, crispy pancakes warm with syrup, fresh berries, or your favorite toppings.
