Ingredients:
2 bone-in pork chops (about 1 inch thick)
Salt and black pepper, to taste
2 tablespoons vegetable oil
4 tablespoons butter
3 tablespoons minced garlic
3 tablespoons brown sugar (light or dark)
½ teaspoon red pepper flakes (optional, for a little heat)
Fresh parsley, chopped (for garnish)
Directions:
1. Preheat oven to 400°F (200°C). Season both sides of the pork chops with salt and pepper.
2. Heat the vegetable oil in an oven-safe skillet (cast iron works great) over medium-high heat. Sear the pork chops for about 3 minutes per side until nicely browned, then remove them from the pan and set aside.
3. Reduce heat to low, add the butter, minced garlic, brown sugar, and red pepper flakes. Whisk everything together and let it simmer for 2–3 minutes until it becomes a glossy, fragrant glaze.
4. Return the pork chops to the skillet, coating them with that buttery glaze.
5. Transfer the skillet to the oven and bake for about 8–10 minutes, or until the internal temperature reaches 145°F (63°C).
6. Remove from oven and let the chops rest for 5 minutes before garnishing with chopped parsley.
