MILK BREAD WITH SESAME

These Sweet Rolls are like warm hugs in bread form! Light, fluffy, and bursting with buttery flavor, they're the perfect treat for breakfast, brunch, or an afternoon snack.

The addition of sesame seeds adds a delightful textural contrast and a nutty flavor that complements the sweetness of the dough perfectly.

Ingredients:

  • For the Soft Dough:
    • 500 grams all-purpose flour
    • 2 teaspoons salt
    • 3 tablespoons granulated sugar
    • 1 teaspoon olive oil
    • 20 grams fresh yeast
    • 250 milliliters milk (warmed)
    • 1 large egg
    • 90 grams butter, softened
  • For the Finishing Touches:
    • Sesame seeds
    • Melted butter (optional, for brushing)


Instructions:

  1. Dry Ingredients First: In a large bowl, whisk together the sifted flour, salt, and sugar. This ensures all the dry ingredients are evenly distributed.
  2. Activate the Yeast: In a separate bowl, warm the milk slightly (until lukewarm, not hot). Dissolve the fresh yeast in the warm milk. Let this mixture sit for a few minutes, until the yeast becomes foamy and active. If using active dry yeast, follow the package instructions for activation time.
  3. Combine Wet and Dry: Add the yeast mixture, 60 grams of softened butter, and the egg to the dry ingredients in the large bowl. Using a stand mixer fitted with a dough hook or a large spoon, mix everything together until a shaggy dough forms.
  4. Knead for Smoothness: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until the dough becomes smooth, elastic, and bounces back when gently pressed. If the dough feels sticky, you can add a tablespoon of flour at a time until it becomes manageable, but be careful not to add too much flour, as this can make the rolls tough.
  5. First Rise: Place the kneaded dough in a large bowl greased with olive oil. Cover the bowl with plastic wrap or a clean kitchen towel and let the dough rise in a warm place for 1 hour, or until it doubles in size.
  6. Shape the Rolls: Once the dough has risen, punch it down gently to release the air bubbles. Divide the dough into 12-16 equal pieces. Shape each piece into a ball.
  7. Second Rise: Grease a 24 cm (approximately 9.5 inch) round baking pan. Arrange the dough balls evenly in the prepared pan, leaving a little space between each roll for them to expand during the second rise. Cover the pan loosely with plastic wrap or a kitchen towel and let the rolls rise again for 40 minutes, or until they are nearly doubled in size.
  8. Egg Wash and Sesame Seeds: Preheat your oven to 170°C (338°F). In a small bowl, whisk together the egg. Brush the tops of the risen rolls with the egg wash. Sprinkle generously with sesame seeds.
  9. Bake to Golden Perfection: Bake the rolls in the preheated oven for 30-40 minutes, or until golden brown on top. If the tops start to brown too quickly, you can tent the pan loosely with aluminum foil to prevent burning.
  10. A Touch of Extra Butter (Optional): While the rolls are still hot, you can brush them with melted butter for an extra touch of richness and shine.
  11. Cool and Serve!: Let the rolls cool slightly in the pan before transferring them to a wire rack to cool completely. Serve these warm and fluffy Sweet Rolls and enjoy their delightful flavor and texture!
