Ingredients:

½ cup creamy peanut butter (or your preferred nut butter)

2 cups powdered sugar

⅔ cup crushed graham crackers (about 5 sheets)

12 oz semi-sweet chocolate chips (or your favorite melting chocolate)

Optional: 1 tsp coconut oil (to smooth out the chocolate)
Directions:

In a large bowl, mix melted butter, peanut butter, powdered sugar, and crushed graham crackers until well combined. Adjust powdered sugar or graham crackers if needed to reach a rollable consistency.

Shape the mixture into 1-inch balls and arrange them on a parchment-lined baking sheet. Chill in the freezer or fridge for about 20 minutes until firm.

Melt the chocolate (and coconut oil, if using) in the microwave in short bursts, stirring until silky smooth.

Dip each chilled peanut butter ball into the melted chocolate, tap off the excess, and place back onto the parchment. Drizzle any leftover chocolate over the balls if you'd like.
